Jack’s Modern Artisan Deli was founded by Jack and Nicole Gillespie with a clear mission: bring elevated, chef-driven food to Leander. A local to the area, Jack returned home during COVID alongside his wife Nicole, whom he met while living in Washington State. With a shared vision and a commitment to quality, they set out to build something the community didn’t have a modern deli focused on doing things the right way.
Jack’s culinary background includes formal training in Washington and experience in high-volume, high-standard kitchens like Stanley & Seafort’s and Saltgrass Steak House, shaping a foundation built on consistency, execution, and flavor. That experience carries into every part of the deli from house-made meats to thoughtfully built sandwiches and reliable catering.
Together, Jack and Nicole have created a concept that blends traditional deli roots with a modern, elevated approach. Whether it’s a quick lunch or catering for a crowd, their goal is simple: deliver high-quality food, done right, every time.
